Cakes with dried apricots

Ingredients

Dried apricots 250g.
Wheat flour 250g.
Soda 1h l.
Sugar 125g.
Butter 60g.
Milk 75g.
Natural yoghurt 120g.
Sour cream 20% 70g.
Sprinkling:
Wheat flour 125g.
Butter 40g.
Sugar 100g.
Vanillin 1 \ 4h. l.
Cinnamon (optional, not used) 1h l.

Cooking method

  • Soak dried apricots overnight in sufficient water.
  • Then drain the excess water, dry the dried apricots with a paper towel, chop coarsely.
  • Prepare sprinkles. Grind the butter with flour until crumbs form. Add sugar and vanillin, stir.
  • For the test. Beat butter with sugar. Add yogurt, sour cream, milk, beat again.
  • Add flour mixed with baking soda. Beat again until smooth.
  • Grease the mold (d24cm) with oil. Pour out the dough. Distribute dried apricots on top. Sprinkle with sprinkles.
  • Bake in an oven preheated to 200C until light golden brown. The time depends on your oven. Mine, in this sense, is not an indicator, it took me 60 minutes.
  • After cooling, cut into strips.

  • Very light dough !! Part of the sprinkling, as expected, is sprinkled, but it is still needed !!!
