Honey-yoghurt bread

Ingredients

Dough:
wheat flour 50 g
water 150 g
yeast (fresh) 11 g
honey 1 tsp
Dough:
wheat flour 450 g
water 100 ml
yogurt (thick) 50 g
honey 1 tbsp
olive oil 1 tbsp
salt 1.5 h l

Cooking method

  • 1. For dough, grind yeast with honey, mix with flour, gradually pour in warm water. Stir until smooth and leave for 20-30 minutes.
  • 2. For dough, mix flour with salt, dissolve honey in water. Mix the dough with flour, gradually adding water. Add yogurt and leave the dough to stand for five minutes. Then start kneading at medium speed and knead for 5 minutes. Add oil, increase speed and mix for another five minutes. Leave to rise for about 45 minutes, until doubled. The dough turns out to be sticky and in consistency is more like butter, not bread.
  • 3. Place the dough on a flour-dusted cutting mat and roll into a ball. After that, roll out the "petal" with a rolling pin. Turn over the resulting workpiece and finally shape the part of the dough not touched by rolling into a ball. Cover with a "petal" on top, pull the edges inward and proof the bread for 40-45 minutes.
  • Honey-yoghurt bread

Note

The bread is very light and fluffy, with a thin crust and a light honey note. Perfectly cut, absolutely not crumble.
