Ingredients

Dough:
eggs 2 pcs
granulated sugar 100 g
wheat flour 80 g
starch 50 g
baking powder 1 tsp
vegetable oil 60 ml
fresh strawberries 150 g
Cream:
sour cream 30-40% or cream 33% 200 g
powdered sugar 1-2 tbsp. l
fresh strawberries 70-80 g

Cooking method

  • Dough:
  • My strawberries, let them dry and cut into small pieces. The varieties of imported strawberries (from Spain, Turkey or Israel) are best suited for this recipe, they are denser and tough, and will not "flow" in the dough.
  • Mix the flour with starch (I had potato) and with baking powder.
  • Beat (with a mixer) eggs with granulated sugar for at least 5 minutes until a fluffy white mass.
  • Add flour mixture. Stir in with a spoon or spatula, being careful not to disturb the texture of the eggs, beaten with sugar.
  • Add strawberries and mix gently.
  • We put the dough into muffin tins, filling them no more than halfway, and put in an oven preheated to 180 degrees. Bake until golden brown for about 20-25 minutes (be guided by your oven). The toothpick comes out of the finished muffins dry.
  • Place the cupcakes on the wire rack and cool. At this time we are preparing cream:
  • Puree the strawberries in a blender, add powdered sugar (to taste) and beat a little more.
  • In a separate bowl, whip sour cream or cream. Combine the two mixtures and mix gently.
  • Decorate the cooled muffins with cream and serve with a cup of good tea.

Very easy to prepare and at the same time delicious, incredibly fragrant, weightless muffins. You can eat them without cream, which my gluttonous men, in fact, did.

I very rarely get such unsuccessful baking - yes, tasty, yes airy, BUT they fall apart when pulled out of the molds, starch does not normally interfere ... butter, and I just poured butter into the dough, probably because of this, the starch evenly and did not mix. Delicious, but I will not do more.

There is still dough left, I decided to bake it in the form of a thin biscuit. Then they layered it with custard with strawberries, poured it with chocolate icing and it turned out to be a minitortic, though crooked - it didn't cut the edges of the cake ...

The cupcakes were baked in silicone molds, laid out in paper tins. This is probably why I had no problems with extraction.
As for starch, I don't even know. I had no problems introducing it into the dough, it sold well, without lumps. Unfortunately, the original recipe does not indicate which starch is needed here.

But I really liked the idea with the cake! I will definitely try to cook it!
