Kulebyaka Goldfish

Ingredients

Milk (heat up to 30 200 ml.
Fresh yeast 20 gr.
Sahar 1 tbsp. l.
Salt 1.5 tsp.
Butter (soft) 120 g
Egg (2 + 1 for grease) 3 pcs.
Flour 750 gr.
Red fleshy pepper (cut into slices, simmer for 5-6 minutes) 300 gr.
Rice (boil 1 cup (200 ml) with broth) 1 glass
Green onions (chop and simmer for 2-3 minutes 400 + 100 g for rice) 500 gr.
Grated cheese 100 g
Pancakes (cook according to your favorite recipe) 10 pieces.
Salmon fillet (cut into slices, simmer for 2-3 minutes) 600 gr.
Salt and freshly ground pepper to taste

Cooking method

  • Kulebyaka is a dish of national Russian cuisine, but this recipe is completely mine - the author's, cooked in my own DR. What can I say, relatives and guests were delighted! Please your loved ones too!
  • Dissolve yeast in milk. add sugar, salt, butter, egg, flour and knead the dough. Cover and refrigerate for at least 3 hours, preferably overnight.
  • Leave the matched dough (the volume increases almost 2 times) to warm up at room temperature. Crumple, cut off a fist-sized piece (for decoration), divide the rest into 2 parts.

  • Roll out one piece of dough 0.6 cm thick directly on a baking sheet lined with baking paper, giving it a teardrop shape.

  • Place rice mixed with onions on top and sprinkle with cheese.

  • Cover with pancakes, head separately, as if slightly separating it from the body.

  • The next layer is fish. Cover with pancakes again, head separately.

  • The last fourth layer is onion mixed with grated egg.

  • Roll out the second piece of dough in the same way as the first, wind it on a rolling pin (it is more convenient to transfer it) and cover the pie with it, join the edges well and tuck them under the bottom. Press the dough well with your hands. so that it fits snugly and gives the kulebyaka a slightly curved fish shape. Grease the top with protein.
  • Form a tail and scales from the remaining piece of dough, set to distance for 20-30 minutes. Pierce in several places with a toothpick to release steam.
  • Grease with yolk and bake in preheated to 180 "C oven 40-50 min. Until golden brown.
