Cooking method

Good day! I recently purchased such a bread maker and am starting to master it. Do not tell me if it has a function - only baked goods?
I plan to bake yeast-free bread, I need a long proofing and no program fits the whole.
I plan kneading separately, proofing separately and then baking.

I'm telling you about my experiences.
Kneading the dough (rye-wheat made from wholemeal flour only with sourdough) on the "French" setting, then let it stand overnight. The dough has risen rather badly, and the leaven is very young, I think it still played a big role.
The next day, I defrosted on the "Yogurt" mode for about 3.5 hours. I got up much better.
I will continue to experiment with proofing in this mode. It's just that the leaven won't stir up, it's kind of inactive, I don't really know what else to do for it to start growing ...
I took the photos, but when you look at what beauty everyone has, it is inconvenient to even lay out your "bricks" ...

I decided all the same that in the Yogurt mode the dough is hot. Now I use this method: I take a rubber heating pad, fill it with boiling water, wrap it in a towel and put it in the microwave. I put a dish with a proofing dough on this building and close the microwave! The dough rises remarkably!
However, as a result, I bake in the oven. For my taste, it tastes better and more porous.
