Please help me pick up a bread maker. I plan to bake yeast-free (sourdough) whole-grain gluten-free bread, I also want ciabatta. I want with the possibility of making yoghurt (fermentation). I need both kneading and proofing and baking sourdough bread. The price is not important yet. I want a reliable assistant who will serve for at least 5-7 years. I do not want a super-large form, so that I can knead small amounts of dough (family of 2 people !!), and not just large ones.

Why not? ask for an empty one to turn on in the "pizza" or "dumplings" mode - where the kneading goes right away - literally for 20-30 seconds - well, for a maximum of a minute - if something happens, you will immediately hear the rattle.
