Zucchini latkes with goat cheese

Ingredients

zucchini 4 things
eggs 2 pcs
goat cheese (feta) 250
mint 1 bundle
dill 1 bundle
onion (green onion) 1 piece
flour 1 glass
salt pepper taste

Cooking method

  • Wash the zucchini, peel, grate the pulp on a coarse grater. Peel and chop the onion. Stir the zucchini and onion with a little salt. Rub the vegetables lightly with your hands to make juice. Drain the juice. Finely chop the dill and mint. Mash the cheese with a fork. Add herbs and cheese to the zucchini, season with salt and pepper and stir. Add eggs and sifted flour to a bowl, knead to a homogeneous mass. Form small patties with wet hands. Flatten them slightly. heat vegetable oil in a skillet and fry the patties in portions on both sides until golden brown, 3 minutes on each side. Serve warm with thick yogurt.
