1st grade wheat bread

Ingredients

wheat flour (1 grade) 500 g
fresh yeast 4 g
water 280 ml
salt 1.5 h l
honey (molasses) 1 tbsp
olive oil 2 tbsp
sesame 1-2 tbsp

Cooking method

  • 1. For dough, dissolve the yeast in 200 ml of water at room temperature. Combine with 200 g of flour and leave to ferment for 2.5 hours.
  • 2. First batch.
  • Add 80 ml of water and 200 g of flour mixed with salt to the dough. Knead at medium speed for 3-4 minutes. Round the dough and leave to rise for 1 hour (until the volume doubles).
  • 3. Second batch.
  • Add the remaining 100 g flour, honey and 1 tbsp of olive oil to the dough. Stir at medium speed for 4-5 minutes (add 10-15 ml of water if necessary). Add the remaining spoonful of oil and knead for another 4-5 minutes. Leave to rise for an hour (until doubled).
  • 4. Put the dough on a cutting mat, divide into 2 parts and form 2 bundles 28-30 cm long. Roll one bundle in sesame and wrap the other twice with it. Roll up the ends, flatten slightly and fix at the bottom, pulling slightly towards the center so that a small gap forms between the turns. Leave to proof for 45 minutes.
  • 5. Bake in an oven preheated to 230 degrees for the first 7-8 minutes, then lower the temperature to 180 degrees and bring the bread to readiness (total time 25-30 minutes). Sprinkle bread with water before baking.

Note

The bread turns out to be quite dense, tight, with a crispy crust and creamy crumb. The taste has a slight nutty note.
