"Vacation" chocolate cream cake

Ingredients

Sponge cake: egg 4 things
sugar 1 st
flour 1 st
starch 1-2 h l
Butter cream: oil 200 g
yolk 2 pcs
milk 60 ml
sugar 65 g
cakes impregnation syrup: milk 100 ml
sugar 30 g
Chocolate ganage:
bitter chocolate (can be white) 160 g
cream 10-15% 160 ml
yolk 1 PC
butter 15 g

Cooking method

  • Biscuit:Beat the yolk and white separately with sugar. Then connect carefully. Mix flour with starch and sift into eggs. Mix everything with a spatula. Heat the oven to 180 g, pour the dough into a 23 cm diameter mold and bake for 15-20 minutes. Cool the biscuit and cut into 3 parts.
  • Cream:put milk with sugar on the fire and bring to a boil. Remove from heat. Beat the yolks and add syrup to them, pouring in a thin stream. Stir and place in a water bath, stirring constantly until thickened. You should get a gruel. Remove from heat and stir until cool. Beat the butter until the volume doubles and gradually whisk everything while adding kashitsu.
  • Syrup: put milk with sugar on fire and heat until sugar dissolves. Cool down.
  • Chocolate ganage:bring the cream to a boil. Break the chocolate into pieces and add to the hot cream. Stir until chocolate is melted. Then add 1 yolk and 15 grams of softened butter. Mix everything again. Set aside to cool.
  • Assembly:Soak the first cake with syrup and grease with 1/2 part butter cream. Put in the second one, also soak and lay out the chocolate ganage. Cover with the third cake, soak and lay out the remaining cream. (I advise you to take more than one portion of the cream, but even 1.5 or 2. Then the cake will be juicier.)
