Stuffed eggplant with mushrooms

Ingredients

Eggplant 4 things
Carrot 1 PC
Mushrooms 100gr
Rice 100gr
Hard cheese 100-200gr
Vegetable oil

Cooking method

  • Peel the eggplants and cut out the middle. Chop the cut core in a blender, add grated carrots.
  • Boil mushrooms, stew, fry (in general, who likes what). I took the mushrooms and fried them with onions. Add salt and pepper to taste.
  • Mix mushrooms with carrots and eggplant kernels. Fry everything a little.
  • Boil rice and mix with frying.
  • Fill the eggplant with the filling. Grease a baking sheet with vegetable oil and put the eggplants on it. Preheat the oven and place the eggplants for 10 minutes.
  • Remove from the oven, sprinkle with grated cheese and put in the oven again for 3-5 minutes.
  • Sprinkle the finished eggplants on top with chopped garlic (or without it) and herbs.

I would say "buckets" or "tubes". The peel is easily removed by pouring boiling water over the eggplant. Carefully cut out the core with a knife. If the eggplants are large, I cut them into 2-3 pieces and these "barrels" are obtained. The last one will be with a bottom, but you can cut it off. We fill the tubes with minced meat and that's it. Stuffing technology like pepper or the same zucchini.
