Spicy eggplant appetizer

Ingredients

eggplant 3 kg.
Sweet pepper 5-6pcs. large
bulb onions 2-3pcs.
carrots (large) 7pcs.
tomato juice 2.5 liters
bitter pepper (optional) taste
garlic taste
sugar 2 glasses
salt taste
vegetable oil 2 glasses

Cooking method

  • Boil 2.5 liters of tomato juice + 2 tbsp. rast. oil + 2 tbsp. sugar, salt to taste, add eggplants there (cut into cubes) boil for 10 minutes, boil carrots (grate on a coarse grater) for 10 minutes, add bell peppers (cut into cubes) boil for 10 minutes, onion (in cubes) At the end add garlic (after garlic press) and hot peppers to taste. Arrange in sterilized jars and roll up.
