Mushroom Potato Soup (Partially Puréed)

Ingredients

White mushrooms (large mushrooms are possible) 5-6 pcs
Water 2 l
Potatoes 4-5 medium
Carrot 2 medium
Dill, parsley
salt

Cooking method

  • Mushrooms (you can, of course, more than 5-6 pieces, I had about a dozen large mushrooms), peel, cut. To fill with water. Cook for 2 hours.
  • Mushroom Potato Soup (Partially Puréed)
  • Purée the mushrooms with a blender.

  • Cut the potatoes into cubes. Chop the carrots. Salt. Cook until tender.
  • Chop the herbs. Add to soup and leave for a couple of minutes. Now you can eat.

It's no secret that mushrooms are poorly digested. We can even say that they are not digested at all. However, mushrooms contain many beneficial trace elements. Almost all of these trace elements end up in the mushroom broth. And after boiling mushrooms, by and large, become unnecessary. But you also want mushrooms, and not just sip broth. Which exit? Puree soup. But not everyone wants to eat liquid puree either. I don't like that at all. And I found a suitable option for myself: puree the mushrooms, but the rest is not. It turns out a thick rich broth. This way the mushrooms are digested significantly. Both useful and tasty I hope you will like this option too

Alyona, to be honest, I don’t like champignons at all - they are tasteless. But my mother loves the mushroom soup (everything is completely pureed). So ... I don't even know what to say.

Here, in principle, you can cook much less, because they are then mashed. Yes, and White prepares faster. By the way, my husband likes it when part of the mushrooms is pureed, and part is whole - the soup is rich, and there is something to chew
