Cottage cheese pie with meringue Angel's tears (multicooker Brand 37501)

Ingredients

dough:
butter 100 g
sour cream 1 tbsp. l. with a slide
yolk 1
sugar 50 gr.
flour 1 tbsp. 250 ml.
baking powder 1 tsp
cream:
cottage cheese 500 gr.
sour cream 1 tbsp. l.
yolk 2
sugar, vanillin 100 g
meringue:
protein 3
sugar 100 g
lemon acid pinch

Cooking method

  • Grind butter with sugar, add yolk, sour cream, mix.
  • Add flour and baking powder.
  • The dough should be soft.
  • Line the MV pot with baking paper (I made strips from the baking sleeve) and lay out the dough, making bumpers to make a "basket".
  • Turn on the multicooker, baking mode for 30 minutes. While the cake is baking, we make the filling.
  • Combine cottage cheese with sour cream, yolk and sugar, grind with a blender. In a separate bowl, beat the cooled egg whites with sugar and a pinch of citric acid. After the signal, open the multicooker, spread the cottage cheese cream and whipped proteins on top. I baked on manual mode at 120 * 60 minutes.

My mother is a pastry chef and she taught me that; the dishes should be dry and very clean and better cold (I sometimes put the bowl in the freezer, empty or already with proteins), you need to separate the whites from the yolks very carefully (garbage or even a gram of yolk will not work), beat the whites first into a foam, then add sugar. And beat until, as they say, the spoon will stand, in a very thick foam.

I am reporting. The bottom is slightly burnt. She baked the first layer for 18 minutes, then laid out the other two, closed the lid. A total of 50 minutes. We could not wait for it to cool down. More than half of them diminished right away. Well, very tasty !!!! The top is like an airy souffle. At first, the middle was a little soft, but kept its shape. While the cake was cooling, it became denser and denser (like a casserole happens). The tears were very small, barely noticeable. But I didn't put it in the refrigerator. Has cooled down by itself. The children had already cooled down, they always asked to cook this. Now I want to repeat this for comparison in the oven
(and I won't be able to fasten my down jacket ...).

Thank you. the pie is delicious, but there is one thing. as I wanted, I baked everything together, cottage cheese and dough. pulling out is problematic, a lot of cottage cheese fell on the table ((((, but it was all covered with proteins, so it’s not visible. I also bought not very good cottage cheese, sour and sugar did not help. There is no longer anything, they ate everything. I still decided to bake proteins in the oven, I love the toasted top.
