Ingredients

Cakes:

vanilla sugar 1 sachet
sugar 250 g
flour 50 g
roasted cashews 180 g
Cream:
yolks 6 pcs.
milk 175 ml
sugar 150 g
cocoa 20 g
butter 250 g

Cooking method

  • Cakes:
  • Pour 3 squirrels into bowls, cover with foil and leave at room temperature for 24 hours. From 6 proteins, 2 cakes are obtained. We bake them separately (if there are 2 forms, you can immediately 2). Beat the whites until frothy and add half the vanilla sugar and 25 g of sugar without stopping to beat. Beat everything. In a bowl, combine half the flour, 100 g sugar and half the lightly chopped nuts. Pour into whites and mix gently with a spatula. Line the springform pan with baking paper and grease with oil. Put the mixture in a mold and bake in the oven at 150 g for about 2 hours. Then take out the mold, remove the cake and let stand for 12-24 hours.
  • Cream:
  • Pour milk into a ladle, add sugar and bring to a boil. Beat the yolks lightly and gradually add half of the hot milk, whisking. Then pour the egg mixture back into a saucepan and bring to a boil. Cool down. Beat the softened butter and add the custard mass on a spoon, without stopping whipping.
  • Assembly:
  • Put 1 cake on a dish and brush with 1/3 of the buttercream. Set aside another 1/3 for decoration. Mix the other 1/3 with cocoa and coat the cake. Decorate as desired.
