Vanilla ice cream

Ingredients

vanilla pod 1 PC
milk 500 ml
cream 33% 500 ml
fine granulated sugar 200 g
yolks 8 pcs

Cooking method

  • Use a sharp knife to cut the vanilla pod in half lengthwise and remove the seeds. Pour milk, cream into a saucepan, add half the sugar and vanilla seeds along with the pod;
  • bring to a boil.
  • Whisk the yolks and add the remaining sugar. When the milk mixture boils, slowly add it to the yolks, whisking constantly. Transfer back to the pot, turn up the heat and stir until the mixture thickens.
  • Strain through a sieve, transfer to an ice cream maker and beat until solid.
  • Place ice cream in an airtight container and place in the freezer as needed.
  • Vanilla ice cream

Note

This recipe is basic and can be varied to taste - just replace vanilla with zest and juice or some kind of fruit. If you want to make ice cream with honey or alcohol, reduce the amount of sugar by 50 g: sugar and alcohol keep the ice cream from freezing properly.

I myself have only tried this basic one, with additives so far in the plans. But how delicious it is - vanilla-vanilla, because I made 1/2 of the recipe, and put 1 pod of vanilla.
But this ice cream needs to be made a lot at once !!! Children purred when they ate)))
So you need to stock up on liters of cream now!

I don't have an ice cream maker, so I cooled it down, poured it into a container and put it in the freezer. Interfered every 30 minutes 3-4 times

friends who curl up the mass during cooking, do not be discouraged! We take an immersion blender in our hands and break it all until smooth. This time everything curled up in flakes, and did not want to thicken in any way. I did it on 5 yolks, reducing the liquid. I just added two more yolks, blended, heated and voila! Everything worked out. To avoid wateriness, take 150 grams of cream 33, beat until peaks and combine with the cooled workpiece. It turns out even more tender. And I also put less sugar, so if you are not a sweet tooth, consider. Thanks to the author for the recipe
