Ingredients

For a biscuit:
Room temperature butter
Fine crystalline sugar
Flour
Eggs
Baking powder 1/2 tsp
Milk 2 tbsp. l.
Vanilla extract or sugar 1 tsp
For buttercream:
Whipping cream 200-250 ml
For butter cream:
Butter (softened) 75 gr.
Powdered sugar (sift) 150 gr.
Milk 1 tbsp. l.
Vanilla extract or sugar 1 tsp
For the berry layer:
raspberry jam (or other to taste) 2-3 st. l.
For decoration:
fresh raspberries (or others to taste) 2 pcs.
Utensil:
round silicone bakeware with a diameter of 18 cm

Cooking method

  • Cooking biscuits:
  • The classic Victorian Butter Biscuit is made from equal weight amounts of butter, sugar, flour and eggs. For example, I took 3 eggs and weighed them without shells (I got 160 grams).
  • I measured out the same amount of butter, flour and sugar. Therefore, I do not indicate the exact amount of ingredients for the biscuit.
  • In a large container, using a mixer (speed 3), beat the softened butter with sugar and vanilla sugar (extract) until it becomes whipped cream.
  • Beat the eggs separately, you can just use a fork.
  • Add portions of egg to the butter mixture and beat thoroughly (speed 3).
  • Sift flour with baking powder and add in small portions, whisking (speed 1).
  • Pour in milk and mix well (speed 1).
  • Divide the dough into two identical silicone molds equally (when dividing the mass, you can weigh it so that everything is accurate). Flatten the surface.
  • Bake the biscuits in the oven at 180 * C on an average level for 25 minutes. Willingness to check with a splinter.
  • Leave the biscuits in a mold for 10 minutes, then place on a wire rack until they cool completely.
  • Preparing the cream:
  • For buttercream, whip the cream into a persistent foam.
  • If, like I didn't have cream today, you can make butter cream. To do this, beat the butter with icing sugar, milk and vanilla sugar into a fluffy light cream.
  • We collect the cake:
  • Smear one cake with cream. Another raspberry jam. Put the cakes on top of each other, combining the fillings.
  • Decorate with powdered sugar and fresh berries.

Prep 20-25 minutes, Bake 25 minutes.
