Tomato ketchup with plums, peppers and apples

Ingredients

tomatoes (preferably fleshy) 5 Kg
sour apples 6-8 pcs.
plum 0.5KG
red bell pepper 0.5KG
bitter pepper 1-3 pcs.
sugar 200 g
salt 60-80 g
vinegar 9% 150 ml
ground black pepper 0.5 tsp
cinnamon, cloves 1/3 tsp each

Cooking method

  • Wash all vegetables and fruits and cut into large pieces, remove seeds from the plums.
  • Place everything in a large saucepan and simmer under the lid for 2 hours, stirring occasionally so that it does not stick.
  • Let the mass cool slightly and pass it through a screw (tomato) juicer. If the cake is wet, then skip it again.
  • Put the saucepan on the fire with sauce, after 30 minutes add sugar, salt, black pepper, ground cinnamon and cloves. Cook the sauce in the second cooking for only 1 hour. You can put the spices in a piece of cloth, tie well and lower the bag to cook, do not forget to remove it later. Hot peppers can be added to the second boil, grind with a blender, or cook in ketchup, cut into halves (without seeds), and then remove.
  • In 10 minutes. add vinegar until the end of cooking. Taste the ketchup and add salt or sugar to your liking if needed.
  • Wash jars, bottles in advance with soda, sterilize with steam, boil the caps and watering can.
  • Pour hot and close immediately. Wrap in a blanket until it cools.
  • Ketchup turns out to be tasty, beautiful color, thick.
  • I cooked a tomato from 3 kg (there was so much). it turned out 3.6 liters of finished ketchup. I added a little more coriander and fenugreek seeds ground in a mortar, it turned out very fragrant.

I still lean towards a different method. If there is no juicer, then you can first wipe the boiled mass from the skins through colo-slag with a crush, and then grind it with a blender.

Any sauce can be accentuated with spices. Interesting with ginger, you must try. I added a little ground fenugreek, I really liked it.
