Ingredients

Cooking method

  • Dough:
  • Mix the yeast with flour, add warm water (40 degrees) and stir with a whisk until smooth so that there are no lumps. Leave the dough for 20 minutes.
  • Dough:
  • Melt the butter and cool. Add to the dough and mix.
  • Mix the remaining flour with salt, sugar and milk powder. Add flour to the dough and mix everything until the flour is completely moistened, until the mass becomes more or less homogeneous. We leave the dough alone for 20 minutes, after which we knead it again until smooth. The dough is soft, slightly sticky. We leave the dough to rise for an hour and a half, with two wrinkles every half hour.
  • Put the finished dough on the table, after dusting it with flour. Cover with plastic wrap and let it rest for 10 minutes.
  • We divide the dough into 10 pieces, I got pieces of dough, 83 grams each.
  • Knead each piece of dough with your hands into a round cake. Then we pull on the edge and place it in the middle of the cake. We repeat this several times, each time pulling and folding the edge of the cake into the center of the bun. Then we collect the edges of the cakes, brought to the center and pinch. Turn the workpiece over with the seam down, cover it with a boat-like palm and roll the bun inside the palm using circular motions. At the exit we get a round ball of dough - a bun. Form all the other rolls in the same way, cover with foil and leave for 15 minutes.
  • Turn the bun upside down and flatten it into a cake. Using a rolling pin, roll out each piece of dough into a rectangle, trying to expel large bubbles. Then we roll up into a roll, tight.
  • We spread the buns in a rectangular baking dish (35x25 cm), after covering it with parchment. We do not stack the rolls very tightly, but with the expectation that they will stick together during baking.
  • We leave the buns for proofing in a warm place for 60-70 minutes (the author of the recipe recommends a proofing time of 90-100 minutes, but I did not dare, I was afraid that the buns would stop), covering them with loose foil.
  • Before planting in the oven, grease the buns with a mixture of yolk and milk, sprinkle with sesame seeds.
  • We bake without steam at a temperature of 210 (convection 190) degrees until golden brown.
  • Let the buns cool before serving, do not cover with anything.

Hello, Galina... I have a gas oven, so, unfortunately, I won't tell you about baking with convection. I only know that baking in this mode gives a smoother heating of the entire dough piece and shortens the baking time (approximately 15-20 minutes). Readiness can be checked with a temperature probe. In finished cotton products, the temperature inside is 97-98C degrees.
