Ingredients

Wheat flour, premium or 1 s. 450 g
Milk or water 30-50 ml
Pumpkin puree 280 g
Granulated sugar 1.5 tbsp. l.
Salt 1.5 tsp
Vegetable oil 2 tbsp. l.
Dry yeast 1.75 tsp

Cooking method

  • Pumpkin cut into small pieces and cook in any convenient way (in the microwave, double boiler or bake in the oven). Using a blender, grind it in puree. From a piece of pumpkin weighing 450-460 g, I got 280 g of ready-made puree. Let it cool to 35-40 degrees.
  • We send all the necessary ingredients to the bucket of the bread machine. The amount of water depends on the moisture content of the flour and on the pumpkin itself, therefore, we pour 20-30 grams of water into the bucket of the bread machine immediately, add the rest of the water (milk) during kneading with a teaspoon as needed. The dough is soft, elastic. Mode - dough 1 hour 30 minutes.
  • Put the dough on a table dusted with flour, knead, roll it into a ball and let it rest for 10-15 minutes.
  • Grease the bread pan with vegetable oil.
  • We roll out the dough into a layer about a centimeter thick (about 30 * 25 cm), expelling large air bubbles with a rolling pin.
  • Roll the dough into a roll, transfer to the baking dish with the seam down.

  • Cover with foil and leave to rise for 40-50 minutes. During this time, the dough piece should increase in volume by 2-2.5 times.

  • Preheat the oven to 250 (230 convection) degrees together with a water container (empty).
  • We put the bread in the oven, pour a cup of boiling water into the container. Reduce the temperature to 230 (convection 210) degrees and bake for 7-10 minutes. After that, lower the temperature to 210 (convection 190) degrees and bake the bread until tender. The total baking time is about 40-45 minutes, be guided by your oven!
