Almond-rum muffin with figs

Ingredients

almond 220 g
butter 120 g
sugar 100 g
eggs 3 pcs
flour 50 g
corn starch 25 g
baking powder 1 tsp
powdered sugar 80 g
vanilla sugar 1 tsp
rum 50-70 ml
fresh figs 4-5 pcs
brown sugar for sprinkling 2 h l

Cooking method

  • 1. Peel the almonds (to do this, blanch them in boiling water for 2-3 minutes, drain and put in very cold water - the skin comes off very easily). Dry the peeled almonds thoroughly with paper towels and grind into very fine crumbs with a blender.

  • 2. Separate the whites from the yolks. Add sugar (100 g) to the resulting almond crumbs, mix. Pour the egg whites into the resulting mixture one by one and beat with a submersible blender until smooth. When the almond mass brightens, add rum in 2-3 doses.

  • 3. Mix flour with starch, vanilla and baking powder. Beat the softened butter with powdered sugar until creamy. Without stopping whipping, introduce egg yolks one by one. Add the flour mixture in several steps, continuing to beat at minimum speed. Then in 2-3 doses, mix the almond mass.

  • 4. Cut half of the figs into slices approximately 0.5 cm thick. The other half into quarters or six pieces each. Pour half of the dough into a mold and spread out the first part of the figs. Cover with the remaining dough, spread the quarters on top and sprinkle with brown sugar.]

  • 5. Put in an oven preheated to 180 degrees and bake for about an hour (until a dry skewer).

No, the almonds were just peeled.
I also added hazelnuts. But I didn't clear it
I didn't grind the nuts into flour, because I wanted them to be larger in the muffin.
