Ingredients

Filling:

carrots (raw, finely grated) 100g
juice and zest of half a lemon
cream cheese 100 g
light honey 2 tbsp
eggs (large) 2 pcs
cream 33% fat 300 ml
sugar 80 g
corn starch 3 h l
apples (medium) 2 pcs
Dough:
flour 300 g
butter 200 g
powdered sugar 80 g
vanilla sugar 1 tsp
sprinkling pistachios (optional)

Cooking method

  • 1. Mix flour with powdered sugar and vanilla sugar. Add well-chilled butter, cut into small cubes, and beat with a blender until finely crumbled. Quickly knead the shortcrust pastry with your hands and distribute it along the bottom of the mold, raising the side to a height of 2.5-3 cm. Cover the mold with cling film and refrigerate.
  • 2. Add lemon juice and zest to the sea buckthorn berries and blanch over medium heat until soft (five minutes). Then grind with a blender and strain through a sieve to get rid of the seeds. Combine the resulting puree (it is quite liquid) with grated carrots and heat over medium heat (without bringing to a boil) for 5-7 minutes, add honey and remove from heat. Allow the resulting mass to cool slightly. Then add the cream cheese and beat with a blender until smooth.

  • 3. Mix sugar with starch, beat in eggs and whisk lightly. Bring the cream to a boil (but not boil) and pour a thin stream into the egg mixture, stirring vigorously so that the eggs do not curl. Then combine the egg-cream mixture and sea buckthorn puree.
  • 4. Peel the apples, cut into cubes and place on the bottom of the dough pan. Pour the filling into the mold (the mixture turns out to be liquid) and put in an oven preheated to 170 degrees. Bake for about 75-90 minutes. At the end of baking, the filling, which rises slightly in the process, should fall flush with the rim of the sand base and spring slightly when pressed with your finger.

Very light and tender cake. The filling with sea buckthorn berries turns out to be incredibly aromatic. The taste of carrots is not felt at all, it only adds sunny colors to the cake.

My shape turned out to be too big (inside 28cm), the filling came out in a thinner layer, but nothing - not a cake, so the tart turned out!

My husband didn't get shortbread dough, so I changed a lot in the dough - I replaced the butter with 100g of feta + 2 eggs and half the flour with ground almonds ...
And in the filling, I replaced only starch with pectin (I can't eat if the thickener is starch or flour ...) and reduced the cream by 3 times, and doubled the cheese (homemade from fresh fermented baked milk).

The bright sea buckthorn aroma and taste was preserved and fascinated regardless of my replacements ...
