Open peach pie

Ingredients

Wheat flour 500g
Whole milk 250ml
Butter 60g
Sugar 40g
Salt 10g
Fresh yeast 15g
Egg 2 large
For the cream:
Cream cheese (I have Ricotta) 500g (2 jars)
Vanillin pinch
Eggs 2 pcs
Sugar 2 tbsp. l.
Large hard peaches 2 pcs.
Apricot jam 2 tbsp. l.

Cooking method

  • I borrowed the sweet dough recipe from Richard Bertine.
  • Sift flour into a bowl.
  • Grind the yeast with flour with your fingertips.
  • Add butter and rub with your hands until fine crumbs are formed. Add salt and sugar, mix everything.
  • Beat in eggs and add milk.
  • I kneaded the dough with a scraper until smooth, then put it on the table and kneaded on the table for about 5 minutes, until the dough became homogeneous, smooth and silky.
  • Then dust the bowl with flour and put the dough under the foil on a proofer at a temperature of 25 - 27C for 1 hour.
  • The dough will increase in size at least 2 times.
  • From this amount of dough, 2 cakes with a diameter of about 30 cm are obtained.
  • While the dough is right, prepare the curd cream.
  • Put cheese in a bowl and add sugar and vanillin.
  • Beat with a mixer at medium speed for 3 minutes.
  • Next, add the eggs and beat until fluffy and smooth.
  • This is also about 3 - 4 minutes.
  • Cut the peaches into thin slices.
  • Divide the dough in half, roll it into a bun and roll each to a diameter of 30cm.
  • Put it in a mold (I have a large plate from a clay pancake maker), then put out the cheese cream, stepping back 1 cm from the edge of the dough, put peach slices on top.
  • We put on a proofer, for 30 - 40 minutes in a warm place (until the sides of the cake rise by 1 cm.)
  • Lubricate the edges of the cake with an egg.
  • Preheat the oven to 180C and bake for 45 minutes, until the sides turn golden brown.
  • Grease the finished pie with warm apricot jam.
