Tyrolean quiche and fruit pie

Ingredients

baking powder 1 tsp
milk 500 ml

flour 1 tbsp. l.
starch 1 tbsp. l.

Cooking method

  • Dough:
  • Beat 250 g plums. butter with 250 g of sugar. Add 1 egg, then 2 yolks.
  • Mix 250 flour with 1 tsp. baking powder and add to the mixture. The dough is not thick, that is, you do not need to knead it with your hands.
  • Cover the form with parchment and spread the dough in it with a spoon. I had a 21 cm shape and a silicone heart. This portion of the dough was enough for both forms. Bake at 200 * C for about 20 minutes. The dough is tender and soft. I cool the finished cake directly in the mold on the wire rack.
  • Custard:
  • Boil 500 ml of milk. Beat 2 eggs, 1 yolk and 125 g sugar. Then add 1 tbsp. l. flour and starch. Beat without ceasing with a mixer, add 250 ml of boiling milk to the mixture. Stir well and pour the mixture into the rest of the milk. We boil on the stove for about 1 minute. I put the cream to cool in a bowl of cold water, stirring it occasionally. When the cream cooled down, I beat it with a mixer so that there were no lumps.
  • Distribute the custard on the cooled cakes. Finely chop the fruits and place them beautifully on top of the cream. I used peach, apple and pear. So that the fruit does not darken, I smeared the decor with gel on each slice. And then the top of the cake was also coated with gel. Sprinkle with coconut on the sides.

Yes, the fruits are fresh. Therefore, the shelf life of this cake is limited. But the custard cannot be stored for a long time. Mine ate pie on the day of preparation and then on the second day too. They liked it both times. But on the second day, the cream soaks into the dough and it becomes more moist and even softer.
