Lamb baked with quince

Ingredients

lamb (loin) 1.5-2 kg
quince 4 things
chili peppers (fresh) taste
marinade:
soy sauce 2-3 tbsp
olive oil 2-3 tbsp
balsamic vinegar 1 tbsp
spations 2 h l
carrots (large)

Cooking method

  • Lamb baked with quince
  • 1. Wash the lamb, clean the ribs. Prepare the marinade from the above ingredients, rub the meat well with it and leave to marinate for 12 hours (I leave it overnight).
  • 2. Cut the meat into two equal parts, turn the pieces with the inner side towards each other, putting the quince slices between them and tie tightly together. Then tie the crossed ribs in pairs and along the entire length with culinary thread.

  • 3. On the bottom of the baking dish, pour the remaining marinade, arrange the carrot pieces. Put the meat blank on top, spread around the quince halves, cover and bake in an oven preheated to 180 degrees for about an hour and a half. Water with the resulting juice periodically. Roasting time depends on the quality of the lamb - the younger, the less time it takes to bake.

  • Quince cooks faster than meat, so I take it out of the mold and return it to the meat 5-7 minutes before it's cooked so that it has time to warm up. Sprinkle the finished dish with finely chopped chili peppers and serve immediately.

Note

It turns out the most tender and fragrant meat. Quince is served as a side dish at the rate of 0.5 pcs per serving. If you wish, you can additionally cook rice with turmeric or saffron.
If desired, you can cook pork loin in the same way.

I'm not a big connoisseur of quince varieties, but if you compare with Ksyushin's photo, then mine is slightly different in shape. On sale we have met only two types - such as used in the recipe and Turkish.Turkish rich yellow color with a waxy rind. In form, it is unlike either Ksyushina or mine.

Marish, here is sweet and not needed. When baked with meat and spices, quince becomes spicy and sharp. Plus fresh chili on top. In addition, as I wrote above, it is cooked and removed before meat. You can try and correct the taste - add spices, sprinkle with a little brown sugar, etc. You can put it under a very hot grill before serving and make a caramel crust.

I freeze part of the quince in large pieces, for winter baking in duck, goose or turkey - you can't think of the best filling for poultry! And also delicious quince baked with honey and nuts, and it makes a wonderful compote, tasty and aromatic.

Marina, what a delicious treat! I prepared it for Sunday dinner, I was afraid that the children would reject the quince. My fears turned out to be unfounded: they ate and praised what looked like potatoes, but tastier. Straight, the holiday turned out. And our dog was happy with the bones.
