Ingredients

Wheat flour 1c. 470g.
Fast-acting instant yeast 4d.
Salt 7d.
Sugar 23g.
Vegetable oil (I have sesame oil) 15g.
Water (46C) 330g.

Cooking method

  • Warm up the water to 46C, add oil, 220g. flour mixed with yeast, salt, sugar and beat for 2 minutes.
  • Pour in the rest of the flour (250g) and knead the dough to the consistency of thick porridge. Leave alone for 15 minutes.
  • Then beat until smooth within 5 minutes with a mixer with a spatula or a combine. I kneaded in Thermomix in the Spikelet mode.
  • The dough is smooth, sticky, with well-developed gluten:

  • Grease hands and table with oil. Put the dough on the table, form a ball:

  • Place in a greased container (volume 4-5 liters), cover with a towel and leave to ferment for 40 minutes. After a lapse of time, put the dough on the table, fold in an envelope:

  • Place the dough, seam side down, back into the container and leave for another 50 minutes.
  • Next, pour the ripe dough onto the table, lightly oiled, flatten it with your hands into a rectangle, fold it several times and put it in a greased form (volume 2 liters). Poke your fingers from above often, often to knock out and pierce the bubbles. Lubricate the surface with oil:

  • Cover with a towel and let the piece proof for about an hour (at 30C).
  • Bake in an oven preheated to 190C for about an hour.

In them, the hot dish is served to the table, that is, they usually have handles and they are pretty, smart-looking. In Russia, an ordinary cast iron frying pan was used for such purposes.
