Quick juicy cake for tea

Ingredients

Dough:
egg yolks 4 things
powdered sugar 200 g
White chocolate 100 g
cream 33% fat 50 g
butter 200 g
flour + baking powder 300 g + 1 hl
Filling:
walnuts (for sprinkling) 50 g
raisins 50 g
fresh figs 300-350 g
grapes 100-150 g
egg whites 4 things
sugar 4 tbsp
brown sugar for sprinkling 2-3 h l

Cooking method

  • 1. Beat softened butter with powdered sugar until creamy. Introduce the yolks one at a time.
  • 2. Bring the cream to a boil, add the white chocolate and stir until smooth. Add flour mixed with baking powder and creamy chocolate mixture to the butter-yolk mixture in several steps. Start with flour.
  • 3. Cover a mold (size 20 x 30 cm) with baking paper, line and distribute the dough evenly. Sprinkle with sufficiently coarsely ground walnuts and place in an oven preheated to 180 degrees for 20-25 minutes.
  • 4. Beat whites with sugar and until smooth. Put the raisins and half of the whipped proteins on the browned crust. Arrange the fig slices diagonally on top. Put the remaining proteins and grapes between them. Sprinkle with brown sugar and return to the oven for ten minutes (until golden brown).

A very quick and uncomplicated tea cake. Figs are now ripe and juicy and, despite the minimal cooking time, they manage to saturate the top layer of the base with their juice. And in combination with toasted nuts and raisins, it adds a slight oriental accent to the pie. Raisins, if desired, can be soaked in some kind of aromatic alcohol.
