Country loaf with bran (in the oven)

Ingredients

Whole grain wheat flour 150g.
Wheat flour (I have 1c) 200g.
Wheat bran 15g.
Dry instant yeast 3d.
Sugar 10g.
Salt 6d.
Vegetable oil 15g.
Water 250g.

Cooking method

  • Heat the water up to 50C.
  • Mix both types of flour with bran and yeast. Add to water. There is also salt, sugar. Knead the dough with a combine harvester at the lowest speed for 2 minutes. Cover and leave for 20 minutes.
  • Then knead at the 2nd speed for 3 minutes.
  • Add oil and knead at 2nd speed for 2 minutes.
  • Next, knead the dough, form a ball, grease with oil, put in a container, cover and leave in a warm place for 1 hour.
  • Then knead the dough, form a ball, cover and leave for 15 minutes.
  • Spread the dough with your hands into a rectangle, roll it up, pinch the edges and place in a proofing basket, seam up. Cover with a towel and leave for 40 minutes.
  • Heat the oven together with the stone to 250C (convection 230C).
  • Turn the workpiece onto paper, make a longitudinal cut, sprinkle with water. Put in the oven on a stone
  • Bake for a total of 35-40 minutes. The first 5-7 minutes at 250C (230C), then, as soon as the incision is fully opened, reduce the temperature to 200C (convection 180C) and bake until tender. Ready bread, when tapped on the bottom, emits a dull sound.
  • Cool on a wire rack without a towel.

Only I have ordinary flour, 1 grade has not been on sale for a long time and I add salt not long before the butter, almost at the end. But I take live yeast, it seems to me more convenient and tastier. By the way, you have not written when to add them? The rolls are delicious, the crust is thin, just right for sandwiches. Now I'll try with a loaf.
