Cupcakes "Universal" (no eggs)

Ingredients

Wheat flour 225g.
Baking powder 1h l.
Soda 1 \ 4h. l.
Vegetable oil (I have a mixture of vegetable + olive) 100g.
Sugar 150g.
Soft fat-free cottage cheese * 125g.
Milk 125g.
Vanillin 1 \ 4h. l.
Salt pinch
Dried apricots (raisins) 150g.

Cooking method

  • Beat vegetable oil with sugar.
  • Add cottage cheese, milk, beat again.
  • Add flour mixed with baking powder, baking soda, salt. Beat until smooth.
  • Add the raisins (if the raisins are dry, pour boiling water over, leave for 15 minutes, drain the water, dry the raisins), mix.
  • Arrange into molds. I used paper (19 pieces).
  • Bake in an oven preheated to 200C (convection 180C) until golden brown for 40-50 minutes. The exact time depends on your oven.
  • Cupcakes "Universal" (no eggs)
  • Cupcakes are soft and tender !!! Recommend!
  • * And now the most important thing is versatility. You can use a variety of dairy products: thick sour cream, low-fat soft cottage cheese, cottage cheese dessert. The proportions and combinations can also be different. The main thing is to add milk to 250g.

baked in silicone molds. I put them on a baking sheet and put a piece of paper under them. 180 degrees and my husband turned on the convection ... Softpaw, this recipe is one of my favorites. At least once a week I have been baking it (mistletoe) for more than one month and always in silicone molds. There have never been problems with a baked or burnt bottom.
I see two reasons:
- 180 with convection in your oven is a lot for this recipe, try to reduce it to 160, or 180, but without convection. (in silicone - you need to make sure)
- the quality of the silicone pumped up. This happens, fortunately, not so often. Of all my forms and molds for the whole time, I threw out only one - for bread, I bake it in glass.

I also thought to do it one more time. I can't find teflon molds anywhere ((and the silicone ones from Finnish. I thought they were good. Maybe they are good, but the truth is, the temperature is too high!)
