Cuban bread (in the oven)

Ingredients

Wheat flour (I have 1c) 425g.
Fast-acting instant yeast (I have "Saf-moment") 7d.
Salt 8d.
Sugar 15g.
Lard (I have ghee) 4d.
Water (50C) 280g.

Cooking method

  • Heat the water to 50C. Add 200g. flour, salt, sugar, yeast and beat for 3 minutes on medium speed. Leave alone for 10 minutes.
  • Then add lard (ghee), add the rest of the flour (225g.) And knead the dough at low speed for 2 minutes. Leave the dough alone for 20 minutes.
  • After a while, knead the dough until the gluten develops in the food processor at high speed, 7-10 minutes. I kneaded for 7 minutes in Thermomix, "Spikelet" mode.
  • Roll the dough into a ball and place in a greased dish, ferment for 30-40 minutes at 38C. During this time, the dough will grow to a maximum (up to a volume of 5 liters) and will lose elasticity - when you press it with your fingers, it will no longer straighten.
  • Then knead the dough, knead for 30 seconds to squeeze out large bubbles of gas, roll into a ball and leave alone on the table for 10 minutes. Next, roll into tight balls, pinch the seam from the bottom and place in a cast-iron saucepan with a volume of at least 3 liters. If there is no cast iron, then on a baking sheet covered with paper.
  • Cover and place in a warm (40-45C) oven for 20 minutes.
  • Make deep (1cm) cross cuts on the workpiece and spray with water,
  • Further, if you bake in a cast iron, like me. Close the lid, put in a cold oven, turn on 200C and bake for 40 minutes. Then remove the lid and bake until golden brown for another 20 minutes.
  • If you are baking on a baking sheet, then put a bowl with 1 cup boiling water in a cold oven, put a baking sheet, turn on 200C and bake for 60 minutes.
  • Cool on a wire rack without a towel.

By the way, the bread tastes the same as in Ukraine they bake on wood, in particular in the city of Mukachevo, where my aunt lives. This year I was resting with her, so I ate half a loaf at a time without anything, even without butter. At home it was scary to get on the scales, but a small child helps to keep fit.

In general, it is advised to keep the open pack tightly wrapped on the refrigerator door. But I keep it in my kitchen cabinet. But I bake often, so they are consumed quickly.
