Quails Under the Chauffeur

Ingredients

quail 4 things
carrot 1 PC
grapes 150-200 g
sherry 200 ml
mixture of four peppers, freshly ground 1 tsp
cubeb pepper (freshly ground) 5-6 peas
mixture of spices "Ras el-khanut" 1 tsp
soy sauce 1 tbsp
honey (used chestnut) 2 h l
olive oil 2 tbsp
basmati rice 100 g
turmeric on the tip of the knife
salt taste
apple (large)
butter 30 g
light honey 1 tsp
peanuts (coarsely ground) 50 g

Cooking method

  • 1. Separate the grapes from the twigs, put them in a jar, pour over with sherry (so that they are completely covered), close the lid and put in the refrigerator to marinate for 24 hours, or better for two days.
  • 2. Remove the berries from the sherry and set aside. Add soy sauce, honey, olive oil and freshly ground pepper to the remaining liquid. Pour the prepared quail carcasses with the resulting marinade and leave to marinate for 1.5-2 hours.

  • 3. Place the carrots cut into slices on the bottom of the baking dish. Grate the quail carcasses with the remaining spices, put in a mold, add the remaining marinade there, sprinkle with olive oil on top and put in an oven preheated to 180 degrees. Bake until tender (about 45 minutes), periodically pouring over the resulting juice.

  • 4. Cook rice, seasoning it with turmeric. Peel the apple and cut into eighths. Put butter and a spoonful of honey in a very preheated frying pan, dissolve until smooth. Place apple slices, pickled grapes and nuts and fry for a few minutes.
  • 5. Put ready-made quails, rice (pre-form in portioned balls) and fried fruits on a serving dish. Serve immediately.

You can bake vegetables for a side dish - eggplant, tomatoes, zucchini, pumpkin slices (also on skewers).
