Candied eggplant

Ingredients

eggplant 1 kg
sugar 1.5KG
water 200 ml
carnation 5 pieces
star anise 2 stars
cinnamon 1 tsp

Cooking method

  • For the third year already, there is such an abundance of eggplants at autumn fairs that I simply cannot help harvesting them in such an original way - in the form of sunny transparent candied fruits!
  • They turn out so tender and fragrant - in muffins, gingerbread, casseroles ... and you don't need to add any spices - just a handful of these eggplant cubes is enough!
  • It is better to choose eggplants that are fleshy, young, without seeds. Or cut the middle part with seeds and use it for another dish.
  • Peel the eggplants.
  • Cut into 1-1.5 cm cubes and place in a soda solution for 1 hour (1 tsp. Soda per 1 liter of water).
  • Rinse well and boil in water for 5-6 minutes.
  • Then place in boiling syrup (from water and sugar), add spices in a gauze bag and cook for 40 minutes:
  • Remove the spice bag. Strain from the syrup (it will be good for them to soak biscuit cakes - very fragrant).
  • Dry candied fruits on parchment paper for 24 hours until completely dry.
  • Store in a refrigerator in a tightly closed container.

Time for preparing:

2 hours (1 hour soak)

Note

Can be used as an independent dessert instead of sweets for tea, as an addition to any pastry - muffins, cottage cheese, gingerbread ...

Rather, here it is worth evaluating the delicate structure of candied fruits as the quintessence of spicy aromas, and for us vegetarians - an additional source of protein even in sweets

And of course, you can play with different additives, you just have to try so that all your blanks do not have too similar taste-aroma - that's me if you experiment with some more berries, vegetables, fruits
