Dactyla greek bread

Ingredients

dry fast-acting yeast (Saf-moment) 1.5 tsp
wheat flour, premium or 1 s 170 g
whole wheat flour 100 g
corn or oat flour 80 g
honey (liquid) 1 tbsp. l
salt 1.5 tsp
water 200 ml
olive oil 3 tbsp. l

Cooking method

  • In warm water we dilute yeast with honey and two tablespoons of premium or first grade flour (we take from the total volume), leave for 10-15 minutes until the "cap" appears.
  • Add all the remaining flour, salt, butter and knead the soft, slightly sticky dough due to the whole grain flour. We roll the dough into a ball, put it in a bowl greased with vegetable oil, tighten with plastic wrap and leave in a warm place for 1 hour.
  • We spread the finished dough on the table, knead and divide into 6-7 parts, I got 6 pieces of 103 g each. Roll each piece into a 12X20 layer and roll it along the long side into a roll. We put in a mold (across), cover with foil and leave to proof for 40-60 minutes.
  • We bake with steam for the first 10 minutes at a temperature of 230 (convection 210 degrees), then lower the temperature to 200 (convection 180) degrees and bring the bread to readiness. The total baking time is about 40 minutes.
  • Put the finished bread on the wire rack, cover it with nothing and let it cool completely.

  • Very soft bread with a bright crust, we really liked it. Stays soft for a long time, even after 2-3 days. Try it!

Unfortunately, it is problematic to give the exact amount of water, especially for bread with whole grain and oat flour, because the moisture content of the flour is different for all of us, like its manufacturers. They did the right thing by adding water during kneading on their own bun.
