Wheat bread with persimmon and yogurt

Ingredients

For dough:
whole grain wheat flour 100 g
water 100 ml
fresh yeast 1 g
Dough:
all dough
wheat flour 1 grade 400 g
persimmon puree 80 g
natural yogurt (thick) 2 tbsp
water 100 ml
olive oil 1 tbsp
light honey 1 tbsp
salt 2 h l
fresh yeast 4 g

Cooking method

  • 1. For dough, dissolve yeast in water, mix with whole grain flour and leave at room temperature for fermentation for 12-14 hours.
  • 2. Make mashed potatoes from fresh persimmons, mix with honey and yogurt. Grind the remaining yeast with flour, add salt, all the dough, pour in water and let stand for 5 minutes. Then add the prepared puree and knead the dough on low speed for five minutes. Add olive oil and blend for another three minutes on high speed and 2-3 minutes on medium.
  • 3. Round the dough and leave to rise until it doubles in volume - for an hour and a half. Then form a round bread and let it proof for an hour.
  • 4. Bake at 230C for the first five minutes, then lower the temperature to 200C for another five minutes. Then lower the temperature to 180C and bring the bread to readiness. The total baking time is approximately 45 minutes. Sprinkle bread with water before baking.

The bread is obtained with a very, very fluffy crumb, with a thin and delicate crust and a pleasant fruity aroma.
