Cheese buns with cranberries

Ingredients

Poolish:
Wheat flour (I have 1c) 100g.
Water 100g.
Fresh yeast (dry) 0.5g. (pinch)
Dough:
Poolish 200g.
Wheat flour (I have 1c) 350g.
Fresh yeast (dry) 3d. (1y.)
Curd cheese "Almette" (ricotta / fat cottage cheese) 200g.
Milk 100g.
Salt 6d.
Sugar 50g. + For sprinkling
Dried cranberries 80g.
Milk for lubrication

Cooking method

  • Prepare Poolish: dissolve yeast in water, mix with flour until smooth, cover with foil and leave at room temperature for 12-16 hours. I got 12 hours.
  • The finished Poolish triples in volume, and many bubbles appear on the wrinkled surface:

  • For Poolish dough, beat with water for 2 minutes.
  • Grind yeast with a little sugar.
  • Mix all ingredients for 2 minutes at 1 speed. Cover and leave for 15 minutes.
  • Then knead until smooth for 5 minutes at high speed.
  • Roll the dough into a ball, place in a container, cover with foil and leave in a warm place for 1.5 hours.
  • After a while, knead the dough, roll into a ball, cover and leave for 15 minutes.
  • Next, stretch the dough into a rectangle with a rolling pin or with your hands, sprinkle with cranberries, sugar, fold in half, roll it out into a rectangle again. This is necessary so that the cranberries do not fall out during further twisting and cutting (I did not do it, I forgot it).
  • Roll up with a roll along the long side. Cut into 9-10 pieces, place on a baking sheet lined with paper, cover and leave for 40 minutes.
  • Brush with milk, sprinkle with sugar before baking.
  • Put in a cold oven, turn on 220C and bake for 18-20 minutes.
