Brazilian truffle Brigadeiro

Ingredients

Condensed milk with sugar 1 can (380 g)
Butter 1 tbsp. l.
Cocoa powder 4 tbsp. l.

Cooking method

  • This delicious and amazingly easy dessert is extremely popular in Brazil and Portugal. Brigadeiro (Portuguese for brigadier) are simple Brazilian chocolates created in 1940 (during a shortage of traditional imports such as nuts and fruits due to the war. At the same time, Nestlé introduced its brand of chocolate powder and condensed milk). Candy named after Air Force Brigadier Commander Eduardo Gomes.
  • Combine a can of condensed milk (always natural, without vegetable fats), butter and cocoa in a saucepan and heat to a boil with constant stirring. When the mass boils, we reduce the fire and, continuing to stir, cook until thickened. Usually, fifteen minutes are enough for this, but since you yourself know that condensed milk is now sold both thick and liquid, then the time may vary.
  • The mass should be smooth, thick and shiny.
  • Brazilian truffle Brigadeiro
  • After that, it is better to pour it into a silicone container (or a container lined with oiled paper - for easy separation during further work) and place it for a while (~ 1 hour) in the refrigerator. If the mass is too hard, then a few minutes at room temperature is enough to soften it. Now, having slightly greased our hands with oil, we can sculpt our candies. Usually brigadeiro is molded into balls the size of walnuts and rolled in chocolate or colored confectionery sprinkles, as well as in chopped nuts.

  • But who will forbid me to give them themed Christmas tree shape on the eve of the New Year?

Note

Thank you Omelochka for being your question reminded me of such a favorite dessert in my environment!

AlenaT
The beauty!)))
Immediately a question: if at room temperature they soften,
then store where?
In a refrigerator?
Suslya

Well, it's better in the refrigerator (although I never had to store it - everything was eaten), but if you make balls, then they don't change their shape! These are Christmas trees, if they stand for a long time in the heat, then the tops will bend.
Suslya, so you need to lubricate your hands with oil, the Schaub is not sticky. And it's better not to put directly on the plate. Even during their preparation. I put a teflon sheet.

Larissa, another hit !!! The dessert is really delicious! Mine are very fond of him. And in the form of Christmas trees for the New Year's table, just class!
MariS
Great !!! Festive and very appetizing! Thank you,Larissa.
dopleta
Marinka, and how do you always manage to write one after the other? I just want to squeeze in between you and the desire to make a guess! Thank you girls!

I take it to bookmarks. Thanks for the recipe!
AlenaT
I thought something ...
But you can put prunes inside too ...
Well this is already a delicacy)))
Manna
Dopletochka! What a simple and delicious recipe
Melanyushka
Dopletochka, thanks! What a simple, affordable, delicious recipe, and even from completely natural products and without preservative dyes! Yes, the fantasy has already been connected: here there is a prune inside, and a nut is possible, and ... you can think of a lot more. And how beautiful it looks, the kids are the very thing that on holidays any factory confectionery, who knows what is made of, to eat.
dopleta
Thank you ! It is really tasty, affordable and cute. The only thing that I forgot to write, but I wrote about it in my recipes before - I always add a pinch of salt to all sweet dishes, even when there is no salt in the original, and sugar in salty ones.
Vasilica
dopleta, !!! I see small Christmas trees in the corner - it means again something interesting from dopleta! Thanks for the recipe and helpful tips! I also add salt and sugar, because these are flavor enhancers. I'll run to put a plus!
eugeshka
dopleta, thank you very much for the recipe, I will definitely use it for the New Year! It's very beautiful, but I don't even doubt the taste !!!

Horror! Another joy that needs to be urgently brought to life!
Just do not understand why milk with cocoa thickens? Is it becoming a little bit chocolate, or what?

Because the liquid evaporates, Ira! And thank you all for your kind words and thanks: flowers:!
Omela
Lorik, Thank you!! Almost a dietary option. And de lose me a normal condensed milk ???
Lyuba 1955
dopleta , BRAVO! and if you use silicone molds for sweets, will the shape hold? Are the tops of the trees for 2 hours?
Vasilica
By the way, what kind of condensed milk do you use? Of everything that is in our stores, I like Rogachev the most.
dopleta
I always buy condensed milk, it contains only whole milk and sugar, and nothing more. Lyuba, I can’t say anything about the molds, because until now I have made only original brigadeiros, that is, balls in "noodles". And I don’t know about how long the trees will stand in the warmth without deforming - they were eaten right away. But, I repeat, it is better to keep these sweets in the refrigerator before serving.
Once again, thank you all for the praise!

Delicious things! But I'm a sculptor ... Question: Can you pour it into silicone molds and freeze it, and then just serve it?

Ann 5730, I answered in the previous message about the molds.

Wow - how many times I ate boiled condensed milk and did not know that it was called so beautifully and like a man !!!
The current didn't sculpt it into balls, it would be necessary to make it somehow, and stuff the nut there, and the prunes, and you can also add ground nuts or sesame seeds to the mass itself!
I am very grateful to you for throwing such a cool idea - to make sweets from boiled condensed milk !!!
Manna
Well, this is not really boiled condensed milk, it is rather a cream of boiled condensed milk, butter and cocoa It's even somehow offensive that Brigadeiro (and it doesn't need to be translated from Portuguese, it sounds very nice in Portuguese) boiled condensed milk was called
Omela
Lorik, I made them !!! At first I tried to spread it into a candy silicone mold .. I’m not happy .. the mass stretches for a spoon .. And rolling the balls - that's it !!! I didn't grease my hands with oil.

No matter how you turn it, boiled condensed milk is in the base and in the overwhelming majority here. And why are you offended for Brigadeiro ?! I, too, can be offended for boiled condensed milk - such a tasty thing, and you -
"boiled condensed milk called..."
.
Eh, we do not know how to value our own, the main thing for us is that the name was "more beautiful and more foreign" And I say: "Boiled condensed milk - it sounds proudly!"

By the way, this does not in any way detract from the merit of the Portulgalians (and together with them, dopleta as the author who posted the recipe here), who thought of making candy out of this divine product! So why am I not as smart as these Portuguese? I translated so much product in vain, cracking it in its pure form! But Brigadeiro could have invented a long time ago! Eh, should I go, buy some boiled condensed milk and fill up with grief?

Mistletoe, what a delicious and beautiful still life !!! Well, the whole diet .... well, you get the idea where she went. My heart feels that I’ll just trample on to the store for boiled condensed milk. If it will not be boiled, at least a simple purchase
dopleta
variety, and even a boiled store-house is, forgive me, in no way at all ... It's all unnatural, no matter what they write ... It's better to cook it yourself.
variety
dopleta, yes, I myself, as a rule, cook it. Only sometimes I buy it, but I take our, Yegorka Rogachevsky MKK. Knowledgeable people working there told me that they themselves eat this - it seems like natural. But you don't always buy it, it doesn't stagnate on store shelves

Yeah, yeah, I like Rogachev condensed milk the most (especially creamy)

Mistletoe, toanfetki just ... no words

Mistletoe, and in what it is that you "rolled" balls?
Omela
Girls, thanks! Condensed milk I have Rogachevskaya, rolled in waffles. Crumbled layer of waffle "Family", produced, by the way, in Ukraine. I bought it at Auchan.

Brazilian truffle Brigadeiro - and you vyot my brigadeirs ... but if you honestly, they didn’t work out very well for me ... ... it’s all the condensed milk is to blame .. firstly, the condensed milk burnt right away, and as a result - the taste of burnt remained in the sweets , well, and secondly, I also could not boil down such a "brilliant" color - again, it can be seen because of the quality of condensed milk ... I stuffed my sweets with prunes!

they didn't work out for me either ((sinning on condensed milk
for a very long time the massane thickened .. cooked for about 20 minutes a little thickened. took it off the stove and when the mixture froze like a stone.
Tomorrow I'll buy another condensed milk I'll try again
mur_myau
Thank you!
dopleta
Please Lena ! Did you? Isn't it tasty?
mur_myau
dopleta,
I plan to make a fudge according to Nigela Lawson's recipe (I have already done it once, chocolate + condensed milk, but they do not boil anything) + this brigadeiro and pour it into two layers. Then cut the candies after cooling and roll in waffles (I have already bought such unsweetened wafers in the form of cakes).

In general, I am preparing in advance for Easter.

I will do - unsubscribe!
Chuchundrus

Accidentally stumbled upon a recipe for these sweets on the network, let me think, I'll look, maybe there is such a recipe in HP))) And here it is! I made them yesterday) only now I didn't have good cocoa at hand, I decided to just melt dark chocolate instead of cocoa .. In general, I thought so - 400 grams of "mass" will not be enough for us anyway - and made a double portion))) and .. probably my second mistake was in this too .. in general, I cooked the mass for about an hour .. did not want to thicken .. in the end it still thickened, but did not want to move away from the walls .. (turned off ..how much can you cook that ..? )) I added chopped nuts, maybe chocolate without nuts is not chocolate for me and put it in the refrigerator .. And today I started spinning and remembered about the mass only after lunch ..)) It became very tough .. viscous .. in general, I could hardly knock it out spoon .. But I wanted to try the candy "immediately", so I still twisted a few balls ..)) By the way, I did without greasing my hands) Dried in sesame, in coconut and cocoa .. Delicious !!! but I got it like toffee .. why? because of chocolate or did you cook for a long time?
