Lamb baked with Madeira

Ingredients

lamb (loin) 1.5-2 kg
carrot 1 PC
onion (large) 1 PC
garlic 2-3 cloves
for the marinade:
garam masala 2 h l
black, Sichuan and pink feather (grind) 4-5 pieces
olive oil 2-3 tbsp
soy sauce 2-3 tbsp
balsamic vinegar 1 tsp
madeira (for baking) 250 -300ml

Cooking method

  • 1. Combine all the ingredients for the marinade, grate the meat well and leave to marinate for 2-3 hours (you can leave it overnight).
  • 2. Peel the onions and carrots, cut into large rings and place on the bottom of a baking dish. Add garlic, lay out the meat, pour over Madeira and bake at 180C for 2-2.5 hours. About 30 minutes before it is ready, remove the lid and let the meat brown, periodically pouring over the resulting juice.

Like real lazy hostess, I marinated the shoulder blade for half an hour in a multi bowl, in it for baked goods for an hour and cooked, turned it a couple of times so that it was evenly soaked in the sauce.
