Cooking method

  • Grate the raw potatoes on a Berner grater "Pizza Greater" aka "Resti" or on a regular coarse grater.
  • Optionally make filling: cheese, bacon, ham, fried onions, etc.
  • Put a layer of potatoes on a frying pan hot with sunflower oil, then a layer of filling, and cover with a layer of potatoes. Fry over low heat until golden brown (covered), then turn over with a plate, and fry on the other side until golden brown under the lid. Approximately 10-15 minutes per side.

Do not grate a lot of potatoes at once, because she lets out the juice, I personally like to grate immediately into the pan, then the next portion. In the process of frying after 10 minutes, you need to pry the potatoes with a spatula, during this time it will grab from the bottom and will not stick to the pan. When you see that it's time to turn over, cover the pan with a plate, flip the potato pancake onto it, and then lower it into the pan with the other side.
The dish is very tasty and fast, "on duty" and hearty.

Water is poured 3 cm above the potato layer. Cook it in a tightly closed saucepan over low heat. The electric stove can be turned off after boiling, since it remains very hot for some time and the potatoes continue to cook.
If you add caraway seeds to it during cooking, the dish will become more aromatic and tasty.
A nutritious sauce or soup is prepared from a decoction of peeled potatoes.

If you rub raw potatoes in mashed potatoes, add a raw onion, an egg, a little flour, salt and pepper, this will turn out our Ukrainian potato pancakes, we love them very much. and this "rösti" was written "Swiss potato pancakes", or also Belarusian potato pancakes (I don't know the subtleties of cooking), but it seems to be needed in mashed potatoes too.

I share my own experience. I myself have been making potato pancakes and sorcerers since childhood and came to this conclusion. if you add an egg to the pancakes, there will be no crisp and there will be an egg taste. on a coarse grater I call potato pancakes and sorcerers "lazy", since this is really not typical for Belarusian cuisine. and on a coarse grater it turns out to be drier, cook faster, it is easier to remove excess juice, and on a small grater, it is easier to drive it through a juicer. and also an old lady-neighbor told me that you can still rub it with a meat grinder (with a coarse grater) and rinse it, then the starch is removed (which reduces the calorie content), but in this case you cannot do without an egg, since starch serves as an adhesive in this case. ... and there will be no crust ... but anyway, this is in any version a favorite dish of our family and guests!
