Liqueur Limoncello, or Italian mezim

Ingredients

Lemons 6 pcs.
granulated sugar 400 ml
water 300 ml
Food alcohol 96% 500 ml

Cooking method

  • Lemons (size matters - take medium or large, or small, but then - 7), wash properly, pour over with boiling water, cut, carefully remove the seeds, grind in a meat grinder or grinder.
  • Pour granulated sugar with water, boil over a fire so that the sugar is completely dissolved and the syrup becomes transparent, cool until slightly warm.
  • Put chopped lemons in a two-liter jar, add alcohol, pour in the syrup and mix thoroughly. It is good to close the jar with a lid so that there is no "information leakage"
  • Put the jar in a cool, dark place for a month. Shake the contents periodically so that the lemon mass better gives its delights into the drink.
  • Liqueur Limoncello, or Italian mezim
  • After a month, strain the contents through 4 layers of gauze, squeeze the mass thoroughly. Some sediment is allowed in limoncello, as in any drink made from natural raw materials.
  • They drink limoncello both in pure form and in cocktails.

Limoncello is the national Italian "mezim". It is to this fragrant liquor that the Italians attribute the fact that they have almost no obscenely fat people. It is so customary that they end a plentiful dinner with a glass of limoncello, which supposedly contributes to better digestion of food. Let's check? If we put the liquor right now, it will be ready for the New Year holidays, and there we also have a long vacation, which is traditionally associated with abundant meals and constant remorse about poorly converging skirts when it comes time to go to work.
Traditional limoncello is actually not cooked like that. Or rather, not only this way. The most common recipe given by reference books is the zest of 8-10 lemons (without the white part), alcohol or vodka, sugar syrup. And they insist on it most often no more than a week. But I was sorry to undress the lemons, and leave them naked and blue for no reason ... Therefore, I was delighted when I attacked the recipe where the whole fruit is involved. Since we have something to compare with (exactly a month ago we returned from a tour of Italy), I can say that this limoncello turned out to be no worse. And even a little more aromatic and richer in colors to the taste than purchased. I would like to think that when Italians make it at home, it looks like this
Now about the degrees. There are 25-30 of them in a traditional drink. I don't know how many of them I got. There is no alcohol meter, but ... I remember the saying of one of our acquaintances: "I know my norm: if I fell, that's enough!" It was enough for me to feel that the world is beautiful, 2 glasses of 30 g each, and my husband tasted another one on top ... But he is in another weight category
But ... I don't really drink vodka. I don't like the taste or the state after. It has now been half an hour since Limoncello had gone to digest Sunday lunch. "Lightness in thought - incomprehensible to the mind!" (C) Honestly, the hops are almost gone, but life is beautiful anyway

Or do it with vodka. Then the water can be halved in the syrup (which is a shame, because the final product will be less). Or not to reduce, and sacrifice the strength of the finished product (in my opinion, it is not criminal, it will still be delicious).

When alcohol has not yet been diluted with water, it has a thick yellow dark color, and when diluted with water it becomes a very bright lemon color, brighter than the lemons themselves. Because of this, all my guests always think that I tint it with something artificial. I add sugar and water to my taste. I drank the original limoncello, the taste and color were exactly the same, but now I try to dilute with more water. so that it is not so strong, usually to the point where alcohol is not felt at all when sipping. and only then the "arrival" was. I get alcohol from my friends' nurses. I will try to take a photo of my limoncello.

Yeah, I've seen this recipe, and I think it's the most traditional. Only I felt sorry for the "undressed" lemons. Where I dug up my recipe, I don't even remember (on the Internet), and I did ... as I did. Almost by eye, "based on". It worked out well.
