Ingredients

almonds (or almond flour) 100 g
coconut flakes 100 g
White chocolate 75 g
cream 33% fat 50 ml
eggs (large) 2 pcs
butter 100 g
sugar 75 g
flour 50 g
baking powder 0.5 h l
dark chocolate 30-50 g

Cooking method

  • 1. Peel and grind the almonds into very fine crumbs (to avoid peeling almonds, you can use almond flakes). Combine flour, coconut, ground almonds and baking powder.
  • 2. Heat the cream well, add white chocolate and mix until smooth. Cool slightly.
  • 3. Beat the butter with sugar into a fluffy mass, whisking, add yolks one by one. Then add about a third of the dry mixture, stir until smooth, add the chocolate-cream mixture and the remaining dry mixture. Beat everything together. Beat the whites into a strong foam and add them to the dough in several steps.

  • 4. Put the finished dough in a mold (D24 cm), put in an oven preheated to 170C and bake until a dry skewer (about 30-35 minutes). Cool the finished cake on a wire rack. Melt the dark chocolate in a water bath, make a mesh with a cornetic and sprinkle with coconut.
