Green sorrel cabbage soup in Oursson pressure cooker

Ingredients

Veal brisket 250-300 grams
Bulb onions 1 PC. small
Fresh carrots 1 PC. small
Sweet pepper handful of chopped (used ice cream)
Ripe red tomatoes 2 pcs. (used ice cream)
Oil for sautéing vegetables 1 tbsp. l.
Fresh potatoes 3-4 pcs.
Fresh sorrel 1-2 bunches to taste (used ice cream)
Salt pepper taste
Boiled egg 1/2 per serving
Sour cream taste

Cooking method

  • Turn the pressure cooker into the Toasting (baking) mode, heat the oil and sauté vegetables (onions, carrots, peppers, tomatoes, spices) on it until the liquid evaporates. Disable mode.
  • Add meat, potatoes, water to the saucepan until the desired soup thickness, close the lid and turn on BOIL mode, pressure 3, time 45 minutes, and bring to readiness.
  • Open the lid, reinstall BREW mode, (do not close the lid !!!), put ice-cream sorrel, parsley, mix, taste. If necessary, add salt and a little boiling water if the soup is very thick.
  • Stir gently and wait until the soup boils again (3-5 minutes), and boil the sorrel for 1 minute. Unplug the pressure cooker, close the lid and let the soup steep. For some more time, the liquid will boil and this time is quite enough for the sorrel to be completely ready and not boiled.
  • Pour the finished cabbage soup into plates, add the boiled egg, sour cream and serve.

I go from the opposite, from the thick mass.

And only after that I add hot water, boiling water, to the desired consistency, the thickness of the soup, and bring the soup to readiness.
Boiling water in order not to stop the process of making the soup, so that the broth does not cool down from the addition of cold water, and it does not need to reheat from cold water. From the "shock" temperature drop of the broth, the broth may turn out to be tasteless, and some ingredients may even "become dull".
With this approach of determining the amount of water in the soup, the density will turn out to be the desired consistency, such as you need. And get exactly the number of servings that will be eaten without a trace. It is customary to consider the volume of a portion to be approximately 350-500 ml. ready-made soup for a person at one time.
