Bread with Provencal herbs

Ingredients

Wheat flour baker. a / c 250 g
Whole flour 100 g
Peeled rye flour 50 g
Milk 3.2% 300 ml
Salt 1 1/4 tsp
Brown sugar 1 tbsp. l.
Butter 40 g
Olive oil 2 tbsp. l.
Dry yeast 1 1/4 tsp
Seasoning 1 tbsp. l.
Ground cumin 1 tsp
Fresh green onions (1 stalk) 10 g
Fresh parsley (1 stalk) 5 g

Cooking method

  • Designed for size "M".
  • Cut the greens and put them in the bread maker together with other products according to the instructions.
  • Set the size to "L" (that is, one size larger), since in many recipes for this program this size is given for such an amount of flour. I did not risk it and did so too. As a result, as I already wrote, I got the right bun when kneading and baked a beautiful, fragrant loaf. And this is the first time!

And I made this bread, replacing milk with whey. ... The bread rose so much that even the top crumpled. Maybe put less yeast? By the way, instead of c / z flour, I used ground cereal

Yeast (for me) in this bread is exactly 1 tsp. Putting less is not worth it. My bread is not made from c / z flour or cereals, but from bakery and rye (recipe "Bread with rye flour" in the "French" program, p. 17). On water (no milk or whey).

"French with rye flour" and "Bread with" Provencal herbs "are completely different in taste, composition, structure, appearance and baking time. They are united only by the addition of" Provencal herbs ".
The bread offered by Tatiana A has a very "fluffy" elastic crumb. French bread is rougher.

Olga @, and how many grams is a packet of "Provencal herbs"? Didn't it work out a lot? I just add one tablespoon to French Rye Flour. And this seems to me enough, because this grass is very "sharp".

This is 10 grams, and, indeed, a bit too much (for me, for example). But my husband likes just this option (due to the fact that the main focus of this mixture of herbs is mint, lemon balm). In general, the number of herbs, of course, everyone chooses for himself.

I like the "dome" in this bread. I specially photographed it from the side. I bake this bread for the second time and the "roof" is just as beautiful. But I already wrote about this in another topic.

All of these herbs, together or separately, can be bought at grocery markets, where Asians sell spices in cups.

I think you can put whatever herbs you find. Green onions and parsley are not a problem, ground cumin too. And from "Provencal herbs" you can put one or two. I didn't add lavender either. But the bread turned out great.

On the advice of one of the bakers, I get whole flour using a millstone coffee grinder. Their cost is about 200-300 UAH. I take grain of hard grades (arnautka), unpolished. I germinate the same grain and use it both as additives and (after a meat grinder) as a "main dish" - I dry it in the form of flat cakes in convection mode in microwave

Finally, I bought the Provence herbs seasonings and baked some bread. Instead of whole flour, I put 50 g of wheat + 50 g of wheat bran. The bread turned out to be very tasty, fragrant !!!

So I think, how did we live without the miracle of HP? You won't find such bakery products in any bakery!

Yoghurt bread with bran and provencal herbs

Natural yogurt 125 g (small glass)
Water 150 ml
(i.e. total liquid volume 270 ml)
Flour 3 cups
Wheat bran ground 2 tbsp. l.
Salt 1 tsp
Sugar 2 tbsp. l.
Powdered milk 1 tbsp. l.
Vegetable oil 2 tbsp. l.
seasoning "Provencal herbs" from Camis 2 tsp.
Yeast 1.5 tsp

Mode "Basic", medium crust.

Cup 240 ml

I took yogurt "Bio MAX classic"
Very decent bread turned out!

I put in bread according to Yana's recipe. Will be ready in 4 hours. True, starting to lay down the ingredients, I realized that the batteries in the scales were dead. So I measured it by eye. I will bake - I will report.
