Jerusalem qadaph

Ingredients

Dough:
couscous 250 g
water 500 ml
butter 200 g
eggs 2 pcs
vanilla on the tip of a knife
powdered sugar 1 tbsp
Filling:
cottage cheese 400 g
soft goat cheese 200 g
light honey 2 tbsp
zest from one lime
Syrup:
light honey 300 g
water 100 ml
juice of one lime
cinnamon (ground 0.5 h l
saffron (ground) 0.5 h l
For sprinkling:
pistachios 50 g
almond flakes 30 g

Cooking method

  • 1. Pour boiling water over the couscous and leave to swell for about 30 minutes (the finished couscous should be completely cooled).
  • 2. Combine all ingredients for filling and blend until smooth (I use a blender).

  • 3. Beat the softened butter with powdered sugar into a fluffy mass and, without stopping whipping, add eggs one by one. Then combine with couscous and knead the dough.
  • 4. Spread half of the dough over the bottom of the baking dish, raising the side about 2 cm. Put the filling on top, then the remaining dough.

  • 5. Put in an oven preheated to 220C for 20-30 minutes. During this time, cook the syrup from the above ingredients. Remove the dish from the oven, spread the almond flakes and chopped pistachios over the surface. Pour half of the syrup over and return to the oven for 10-15 minutes. Reduce the temperature to 180C. Then remove from the oven again and pour the remaining syrup over the cake. After that, bake for another 15-20 minutes.

  • 6. Leave the finished cake in the form for twenty minutes, then remove.

Note

Very aromatic, delicate pastries. Despite the large amount of honey, it is absolutely not sugary. Good both warm and cold.
When baking, it is better to use a non-split form, since the syrup may leak.
