Milk Cold Bread

Ingredients

Dough:
dry fast-acting yeast 1.2 tsp
wheat flour of the 1st grade and a / c 330-350 g
1 chicken egg + milk = 220 ml
granulated sugar 2 tbsp. l
salt 0.75 tsp
powdered milk 20 g
butter 30 g
For the top:
milk 1 tbsp. l
sesame 1.5 tbsp. l

Cooking method

  • Mix yeast with flour (leave a couple of tablespoons of flour from the total amount, add them a little later), add granulated sugar and salt. Lightly beat the egg with a fork, add warm milk to the 220 ml mark, combine with the flour mixture and knead the dough in a combine (kneader) or in a bread maker at any convenient mode, the main thing is that the kneading starts immediately. After 10 minutes, we stop the kneading and give the dough a little rest, for 10-15 minutes. Add the remaining flour and softened butter. Knead the dough until smooth for another 15-20 minutes. The dough turns out to be soft, not sticky, it does not smear along the bottom of the bucket under the mixer.

  • We remove the container with the dough in a plastic bag and put it in the refrigerator for 10-15 hours. This is how the dough looked after 15 hours in the refrigerator:

  • Put the finished dough (cold) on a table slightly dusty with flour and roll it into a layer 5 mm thick, the width of the dough layer is equal to the length of the form in which the bread will be baked. Roll the dough into a roll on the long side and put it in a mold (grease and cover with baking paper) with the seam down.

  • Cover with foil and leave for 2 hours at a temperature of 27-29 degrees.

  • Preheat the oven to 230C (convection 210C) degrees along with an empty water container. Grease the dough piece with warm milk and sprinkle with sesame seeds (I had a ready-made grain mixture for baking from flax, sesame and sunflower seeds).
  • We put the bread in the oven, pour 130-150 ml of boiling water into the container and close the door. After 8 minutes, lower the temperature to 200C (convection 180C) and bake the bread until cooked for about 30-35 minutes (baking time depends on the oven).
  • Put the finished bread on the wire rack, cover it with nothing and let it cool completely.

When you select a program, the oven writes the time of the entire program on the display. For example 3 hours 10 minutes. When you click on the plus sign, you thereby make a deferral ... If it was 3-10, but it became 4-10, this means that you made a deferral for 1 hour.
