  • If you grow your own tomatoes, or can buy a lot of cheap and good tomatoes, dry them for the winter. Although they are not real Italian tomatoes dried in the sun, homemade tomatoes also have a pleasant tomato flavor and are great for the winter. To sterilize cans, wash them with soapy water, rinse and place in a cool oven to dry and heat.
  • 1. Preheat the oven to 80 degrees C. Rinse the tomatoes and peel them off, then cut them in half lengthwise, put them on a plate and squeeze out the seeds. Place a double layer of paper tea towels on a flat surface and place the halves upside down to drain the juice while you prepare the rest.
  • 2. When you are ready, turn all the tomatoes over and sprinkle with salt inside - do not oversalt, or the tomato concentrated sweetness will disappear when they dry. Then place the tomatoes, cut down, on the grates, leaving a little space between them, just so that they do not touch.
  • 3. Put the foil on the bottom of the oven to catch all the juice and so that it doesn't go through the oven afterwards, and put two grates in the oven.
  • 4. Leave the oven door ajar, put a skewer or something else in it to prevent the door from closing. The hole should be no more than 5 mm so that heat does not accumulate in the oven, so that the tomatoes dry out and not bake.
  • 5. If the tomatoes are medium, you will need 8 hours to dry them completely, but look after 6 hours and take out any that appear to be done. At this point, they can be turned over. Tomatoes should be dried, but they should be soft to the touch - don't let them dry out and become papery. When in doubt, try one, it should be easy to chew and have a tomato sweetness.
  • 6. Prepare a sterilized jar. When the tomatoes are cool, place them in a jar - not too tightly - pour olive oil over, seal and sign.
  • Stored for at least 6 months.
