Chocolate custard muffins

Ingredients

chicken eggs 2 pcs
premium wheat flour 120 g
granulated sugar 100 g
powdered sugar 120 g
butter 75 g
vegetable oil (odorless) 75 g
potato (or corn) starch 35 g (50 g)
cocoa powder 3 tbsp. l
bitter chocolate 125 g
cold water 225 ml
baking powder 10 g

Cooking method

  • Pour sugar, cocoa powder, starch into a saucepan and add water. Mix everything well and put on fire. Stir constantly, bring to a boil, as soon as the mixture thickens, remove from heat.
  • Add pieces of chocolate and butter, stir until smooth.
  • Add vegetable oil and a couple of tablespoons of powdered sugar (it is much more convenient to stir in the oil this way) and stir again.
  • Check the temperature of the dough, it should not be hot, add eggs and the remaining icing sugar alternately.
  • Mix flour with baking powder and sift into a chocolate mass, knead the dough.
  • Grease muffin molds with butter or put paper molds in them, spread out the dough.
  • Bake in an oven preheated to 180C (convection 160C) degrees 25-30 minutes (baking time depends on the size of the molds and on the oven), the toothpick comes out of the finished muffins almost dry, with small traces of chocolate, but not dough.
  • Put the finished muffins on a wire rack and cool.
  • Enjoy your tea!

Measured in grams on electronic scales. The dough turned out to be viscous, with bubbles inside (but not a lot ... I did not beat it) in the molds, viscously pulled together. I put everything according to the recipe, and potato starch 35 gr. baking powder is fresh, a friend from Germany brought it, but I used it for the first time. A little more than half of the dough was poured into the molds.I have a new oven (though now a gas oven), with convection I set the temperature to 160 • with gas, I was not very afraid to burn it, then I put a bowl of water on the lower grill. She put muffins in tins 2 trays above the bowl of water. 15 minutes did not open the oven at all, the dough was a little bit over the tins. For 20 minutes I was ajar and realized that the muffins were wet, I changed the trays and closed the spirit. And then they fell inside themselves🙈 and as a result, the highest of the ready-made ones were on par with the mold. As a result, they prepared for 30 minutes.

I think you need to bake it in half a portion, it is too heavy for such a large amount of dough. The cake tasted like it was not a biscuit, but like a soufflé or thick mousse .. that is, after settling, the biscuit did not turn into a piece of dough, as it usually happens!
