Goose "Lacquered"

Ingredients

Goose (duck) 3kg.
Butter 100g.
Rosemary 3 twigs
Salt pepper taste
Filling:
Apples 3 pcs.
Raisins 100g.
Syrup:
Grapefruit red 2 pcs.
Sugar 100g.
Honey 100g.
Rosemary 1 branch

Cooking method

  • Mix oil with salt, pepper, chopped rosemary leaves. Grate the prepared goose with this mixture (outside and inside) and leave for 12-18 hours.
  • Prepare syrup. Squeeze the juice from the grapefruit, mix with sugar and honey, bring to a boil. Put a sprig of rosemary, turn it off, cover and leave to infuse. Then remove the rosemary.
  • Core apples, chop coarsely and mix with raisins. Fill the carcass with the mixture, poke a hole with toothpicks.
  • Put the prepared goose in a bag for baking, breast down, make punctures on top. Bake at 200C for 2 hours.
  • Carefully cut the bag, bake for another 30 minutes, pouring syrup every 5 minutes on the goose. It is more convenient to use a spoon with a long handle.
  • Garnish with grapefruit circles when serving.

Lyuba, originally the recipe was for duck. I don’t think we need more grapefruit. I got 300g of juice. and the syrup was runny. If there is more grapefruit, then the syrup will be even thinner, and it will drain from the duck goose. If you want more sour, add less sugar.
