Swedish cumin bread

Ingredients

Flour in \ s 300 g
salt 5 g
active dry yeast 7 g
brown sugar 30 g
butter 15 g
water 200 ml
water (42 * С) for soaking yeast 40 ml
caraway 1 tsp
zest from one orange, I used lemon 1 PC.

Cooking method

  • Boil 200 g of water with orange peel and a spoonful of caraway seeds for 3 minutes (in micro or in bulk). Add raw sugar, salt, butter, stir and pour into a bowl to cool.
  • Pour yeast with water from T 42C and, without stirring, leave for 15 minutes to soak the yeast (I put it on the battery)
  • Pour half the flour into the water in a bowl, mix, pour in the yeast, mix and leave to ferment for 1.5 hours at 25-27C.
  • Then add the rest of the flour and knead the dough, I kneaded in a Kenwood combine. Leave the dough alone for 15-20 minutes to form gluten before kneading. Next, knead the dough to a silky state, adjusting the consistency to very soft water or ice. Roll the kneaded dough into a ball and leave on the table for 10 minutes. Next, roll it into a layer and roll it up, pinch it and put it in a mold for proofing for 45 minutes at 25-27C.
  • Bake for 1 hour at 350F (176 * C) until golden brown.

This procedure must be done if you are using Saf-Levyur yeast, for Saf-Moment you do not need to do this.

I liked the bread, a very unobtrusive smell from lemon, and I generally like caraway in bread, the crumb is airy. So try it. As for the yeast, how correct it is to breed it like that or not, I don't know, I did it as it was written in the recipe, I had a Saf moment
