Ingredients

pork loin 2.5-3 kg
turkey fillet 400-500 g
zucchini (small) 1 PC
oat flakes 2 tbsp
egg 1 PC
fresh parsley 0.5 bundle
mixture of four peppers 1 tsp
marjoram, thyme 0.5 h l
juniper berries (dry) 6-8 pcs
olive oil 2-3 tbsp
light honey 1 tbsp
balsamic vinegar 2 h l
gin 50-70 ml
salt taste
almond petals 20-30 g

Cooking method

  • 1. Remove the spinal bone from the meat, make cuts between the ribs to a depth of 2-3 cm and clean the ends of the ribs. Then roll up and sew the end sides together. At the same time, cut off excess meat, which will interfere with getting the desired shape. In order for the "crown" of ribs to be symmetrical, you need to choose a piece of loin for 9-10 ribs or two for 5-6 ribs. In the second version, the pieces are sewn together, and then the end sides are sewn together.

  • 2. Combine olive oil, honey, balsamic vinegar and, add two tablespoons of gin, half of the ground pepper mixture, salt and grease the meat.
  • 3. Prepare minced meat from turkey and pork pulp cut from a whole piece. Add grated zucchini (squeeze out excess juice), finely chopped parsley, oatmeal, egg, remaining gin and spices. Salt to taste and stir until smooth.
  • 4. Crush juniper berries in a mortar and grate the meat. Place part of the minced meat around the "crown", put the rest in the center. Brush again with the marinade.

  • 5. Place the meat in a tin lined with foil. Wrap the foil around the bottom layer of minced meat and wrap the ends of the ribs. Put in an oven preheated to 200C for 15 minutes, then lower the temperature to 170C. Pour some olive oil into the bottom of the mold and bake for another 20-25 minutes. 10-15 minutes until ready, remove the foil from the bottom layer of minced meat, grease with the remaining marinade and sprinkle with almond petals.
