Cooking method

  • We cut off the wings and legs of the duck and hazel grouse (in my case, to be honest, it was a dove). But we leave the goose, it should have the most naturalistic look - so that guests can effectively lose their senses at the sight of a knife that goes into a fried goose carcass like butter. When cutting birds, you need to be very, VERY, VERY, VERY careful with the knife. Since its sharpness should be approximately scalpel-like, it is not necessary to take from me approximately and it is better not to experiment with fingers. My big and forefinger did suffer some losses in volume and weight. But this whole thing is alive.
  • Boil the egg.
  • Cut the apples into thin slices.
  • Rub the goose with salt and spices, put in the duck (also rubbed on all sides).
  • Layer the empty spaces with apples and grapes. We put hazel grouse in the duck, and in it - an egg, where instead of the yolk there are three grapes. (In general, an olive oil stuffed with something was planned. But the auto-press was stupid and the presence of a can of olives at home was found in the dead of night late in the evening, when the shops were no longer open). We also sandwich everything with apples and grapes.

  • I sewed it up in the usual way - with threads, since with toothpicks my bird's body falls apart, alas.

  • Then we rub our matryegus with salt and spices, put it in the sleeve, and then in the oven. I kept it for 3 hours at a temperature of about 150 degrees, and then turned off the stove and did not disturb the birds until morning. So they spent the night in the oven.

  • Pys: inside the goose, all our ingredients are so compressed and mixed with each other that it is almost impossible to make out where the apples are and where the strangers are. I barely found the egg.
  • Pys-pys: the godfather strongly recommended the Indo-woman. And she (godfather) in poultry, oh, how she understands. So I did not argue and did not regret it.

This idea came to my mind after our beloved Maher-SchuMakher convinced everyone that scratch a skeleton out of a chicken, not such a problem. And even a holiday immediately came up with, on which the idea can be implemented: my father's birthday, which we celebrate on January 1. A wonderful occasion to experiment and show off in front of relatives once again. Which was implemented on 01.01.2013.

Sveta, I saw the recipe and remembered my own, they made it for the anniversary 10 years ago, only the set of birds was slightly different, there was also a duck in the goose, and a chicken in the duck, but not a small one. I barely lifted the dish from the table. But it was beautiful and probably delicious. I didn't try it myself
