Ice cream brulee with caramel flavor

Ingredients

cream 20% 500 ml
sugar 150 g
yolks 4 pieces

Cooking method

  • Dissolve 100 g of sugar in a saucepan until amber color, pour 150 ml of cream and boil until the caramel is completely dissolved. Heat the rest of the cream to a boil. Mix the caramel sauce and cream. Beat the yolks with 50 grams of sugar until white. Pour the cream into the yolks in a thin stream with constant stirring. Put the saucepan on the fire, whisking constantly with a whisk (or mixer) until thickened. Chill well. I put it in the freezer. Pour into an ice cream maker for 40 minutes.

The ice cream turned out to be VERY tasty. I did it the first time. No eggs tasted !!!!!!
